  • 1 cup flour
  • 1/3 cup oats
  • 3/4 cup sugar
  • 1 pinch salt
  • 6 tablespoons butter, melted
  • 1/2 cup chopped hazelnuts
  • 2 pounds rhubarb, chopped
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon orange zest
  • 1/4 teaspoon salt
  1. Make the crumble
  2. Mix the first four ingredients together in a large bowl. Add the hazelnuts and melted butter. Hand mix the ingredients and form it into large clumps. Set aside or store in the freezer until needed.

  3. Prepare the oven
  4. Turn on the oven to 375 degrees Fahrenheit.

  5. Mix the rhubarb
  6. Mix the remaining ingredients together in a ceramic or glass baking dish.

  7. Add the crumble
  8. Spread the crumble on top of the rhubarb mixture.

  9. Bake the crumble
  10. Bake the crumble for 45 minutes. Let it cool slightly before serving. Serve with whipped cream or ice cream.

    For an alternate version of this recipe, substitute some of the rhubarb for fresh strawberries. Some reviewers also substituted the hazelnuts for almonds.
