To make Simply Quinoa's quinoa bread recipe, start by whisking 2 tablespoons of honey into 1 1/2 cups of warm water. Add 2 1/2 teaspoons of active dry yeast, and let it stand for five to eight minutes. In a separate bowl, combine 4 ounces each of chickpea and quinoa flour, 3 1/2 ounces sorghum flour and 5 1/2 ounces potato starch. Add 2 teaspoons xanthan gum and 1 teaspoon sea salt.
In a small bowl, beat together 3 large eggs and 3 tablespoons of almond oil. Mix the dry ingredients on a low speed, gradually adding the yeast mixture. Continue mixing, and gradually add the egg mixture. Mix for two minutes. Add 2 tablespoons dry quinoa, 2 tablespoons raw sunflower seeds and 1 tablespoon poppy seeds, if desired.
Pour the dough into a parchment-lined loaf pan, and allow it to rise for 35 to 40 minutes. Preheat an oven to 375 degrees Fahrenheit. Bake the loaf for 40 to 50 minutes or until lightly brown, then remove the loaf from the pan, and allow it to cool completely before slicing.
