Follow the recipe on About.com by finely grating 1 small onion and finely chopping 2 tablespoons' worth of fresh parsley. Beat two large eggs. Place both the solid and liquid contents of one 16-ounce can of salmon into a mixing bowl. Flake the salmon with a fork, and remove or mash any bones that you may come across. Add the prepared onion and parsley as well as black pepper to taste, then stir in the eggs. Add 1/2 cup to 3/4 cup of fine dry bread crumbs, or use just enough to form patties with the mixture. Cover the patties in more bread crumbs. Gently fry the patties on both sides with butter in a skillet until they turn brown.
