Make pumpkin pancakes from scratch by combining 1 1/4 cups of flour, 1/4 cup of sugar, 2 teaspoons of baking powder, 1/2 teaspoon of cinnamon and 1/4 teaspoon of nutmeg in a bowl. Add in 1 cup of milk, 1/2 cup of pumpkin, 1 egg and 1 tablespoon of oil.

To make another good recipe from scratch, whisk 2 cups of flour, 3 tablespoon of brown sugar, 2 teaspoon of baking powder and 1 teaspoon of baking soda in a bowl, and season the mixture with 1 teaspoon of ground allspice, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground ginger and 1/2 teaspoon of salt. In another bowl, beat together 1 1/2 cups of milk, 1 cup of pumpkin puree, 1 egg, 2 tablespoon of oil and 2 tablespoon of vinegar. Fold the wet ingredients into the dry ingredients until the batter is just combined. Cook the pancakes on frying pan greased with oil or melted butter at medium-high heat until both sides are golden brown.
