Make pumpkin oatmeal squares by mixing together 1 1/2 cups of quick-cooking oats, 1/4 cup of dark brown sugar, 1 teaspoon each of baking powder and cinnamon, and 1/2 teaspoon each of salt, nutmeg and pumpkin pie spice. Stir in 1/2 cup of half-and-half, 1 egg, 1 teaspoon of vanilla extract and 1 1/2 cups of pumpkin puree. Press the mixture into a pan, and bake the bars at 350 degrees Fahrenheit for 30 minutes.
To make another pumpkin oatmeal square recipe, whisk together 1 tablespoon of ground flax and 3 tablespoons of water. While allowing the mixture to sit for five minutes, combine 1/2 cup of canned pumpkin and 3/4 cup of coconut sugar in a separate bowl, and beat in the flax mixture, 1 teaspoon of vanilla extract, 1/2 teaspoon of baking soda and 1/2 teaspoon of fine sea salt. Season the batter with 1 1/2 teaspoons of cinnamon, 1/2 teaspoon of ground ginger and 1/8 teaspoon of ground nutmeg. Fold in 3/4 cup of oat flour, 3/4 cup of rolled oats, 3/4 cup of almond flour, 1 tablespoon of arrowroot powder and 1/2 cup of chopped pecans.
Pour the dough into a baking pan, and press 2 tablespoons of mini chocolate chips into the tops of the bars. Bake the bars at 350 degrees Fahrenheit for 15 to 19 minutes.
