To bake pumpkin cheesecake bars, form the crust with graham cracker crumbs and melted butter in a baking pan. Then, spread the cheesecake filling made from cream cheese, sugar, eggs and pumpkin on top, and bake at 300 degrees Fahrenheit for about 50 minutes or until set.
First, preheat the oven to 300 degrees Fahrenheit. To create 24 bars, line a 13 inch by 9 inch baking pan with parchment paper. After mixing 1 1/2 cups of graham cracker crumbs and 1/4 cup of melted butter, press the crust onto the bottom of the pan.
Now add 32 ounces of cream cheese and 1 1/2 cups of sugar to a mixing bowl, and beat until it's light and fluffy. Now beat in four eggs, one at a time, until blended. Take half of the filling mixture, and spread it over the crust in the pan. Take the remaining filling, and add one cup of canned pumpkin and two teaspoons of pumpkin pie spice. Blend the filling evenly, then spread it over everything else in the pan.
Finally, bake the cheesecake for about 50 minutes, or until just set. Let it cool, and refrigerate it for at least three hours before cutting into bars. Serve the bars topped with whipped cream and a pinch of pumpkin pie spice.
