To make pork chow mein, mix scallions, celery, cabbage and Asian sesame oil, and mix with soy sauce, sugar, corn starch and chicken broth. Cook for 20 minutes. It takes a total of 40 minutes to make this dish, with 20 minutes to prepare the ingredients and another 20 to cook it.
Place 1 tablespoon of vegetable oil in a large skillet and heat until hot without smoking. Take two scallions, trim them and then cut them crosswise into 1/4-inch strips. Place the scallions, 1/4 cup of sliced celery and 1 1/2 cups of sliced Napa cabbage into the skillet. Stir fry these three ingredients for around three minutes. Once the cabbage wilts, this portion of the stir fry is done.
Next, add into the stir fry 1 teaspoon of Asian sesame oil, 1/2 tablespoon of soy sauce, 1/4 teaspoon of sugar and 1/2 cup of chicken broth. Cover the skillet, and allow it to simmer for another three minutes. Dissolve 1/2 tablespoon of cornstarch into 1 tablespoon of cold water, and then add to the skillet and mix.
Bring this mixture to a boil. Add in 1 cup of cooked pork tenderloin that is cut into slices and mix well. Use red pepper flakes to season to taste. Cook long enough to heat the entire mixture. Take off the burner and serve over noodles.
