To make a pistachio pudding and Cool Whip salad, or Watergate Salad, combine 1 can crushed pineapple with the juice, a package of pistachio pudding mix, 1 cup miniature marshmallows and 1/2 cup chopped pecans. Stir in 1 1/2 cups Cool Whip, and refrigerate the salad for at least an hour. Make a cake version of the Watergate Salad by using yellow cake mix, pistachio pudding mix and walnuts. To make the cake, first mix together a box of yellow cake mix, the pistachio pudding mix, 1 cup club soda, 1/2 cup oil and 4 eggs. Use an electric mixer to beat the cake mixture on low until moistened, and continue to beat on medium for two minutes. Add in 1/2 cup chopped walnuts.
Pour the batter into a floured and greased 10-inch tube pan, and bake for 40 to 45 minutes at 350 degrees Fahrenheit. Allow the cake to cool for 10 minutes, and then remove it from the pan.
