To make a pineapple delight dessert, mix 2 cups of graham cracker crumbs with 1/2 cup of melted butter or margarine. Press the mixture into a pan, and bake it for 10 minutes at 350 degrees Fahrenheit. Once the crust is cool, fill it with crushed pineapple. In a separate bowl, cook 1 package of vanilla pudding mix, and mix it with 8 ounces of cream cheese. Spread the mixture over the pineapple filling, and decorate it with whipped cream.
As an alternative, make the cream cheese filling by whipping together 1/2 cup of softened butter or margarine, 1 large egg, 1 teaspoon of vanilla and 1 1/2 cups of icing sugar. Fill the crust with this mixture before adding the pineapple. Bake it for 15 minutes at 350 degrees Fahrenheit. While the dessert is baking, prepare 2 cups of whipped cream. Drain the liquid from 1 14-ounce can of crushed pineapple, and mix it with the whipped cream. Spread the pineapple mixture over the desert.
To make an alternative crust, cook 1 package of yellow cake mix, following the directions on the package. Allow the cake to cool, and top it with the fillings. Garnish it with some whipped cream, pineapples and graham cracker crumbs.
