Piccalilli relish is a type of salsa sauce which calls for green tomatoes, onions, sweet peppers, pickling spices, vinegar and salt. The dish makes 8 pint jars of relish. This dish is served as a condiment or side with a variety of dishes like burgers and baked beans.
Piccalilli relish is set up for canning, which makes it ideal for anyone new to canning. In order to can the relish, canning jars and lids, along with a pot large enough to boil them in are needed in addition to the recipe ingredients.

- 24 green tomatoes
- 12 large sweet onions
- 12 large sweet peppers
- 1 heaping cup of salt
- Apple cider vinegar
- 1/2 cup pickling spices
- Slice the vegetables in 1/4-inch slices and put in the cheesecloth. The layers need to be alternated and also separated with salt.
- Let the vegetables sit in the cheesecloth and salt overnight. Situate the vegetables in a manner that keeps them out of contact with the juice as they drain overnight.
- The next day add the vegetables in a pot and cover with the vinegar. Take the pickling spices and put them inside a piece of cheesecloth. Place this cloth into the pot with the vegetables and vinegar.
- Cook for 2 hours or until the onions are tender, then can using the hotpack method.
