Most pea salad recipes call for a combination of cheese and bacon with peas. Some, like Taste of Home's Creamy Pea Salad recipe, combine different types of cheese, namely cheddar and mozzarella in this case. Food Network's English Pea Salad recipe uses only cheddar but combines it with plenty of mayonnaise, chopped hard-boiled eggs and fresh lemon juice in addition to the traditional peas and bacon.
English Pea Salad
Yielding 4-6 servings, this pea salad recipe is quick and easy. Leftovers can safely be stored in the refrigerator.

- 4 slices bacon
- 10 oz. frozen peas, thawed
- 1 cup shredded Cheddar cheese
- 2 hard-boiled eggs
- 3 tbsp. mayonnaise
- 2 tsp. freshly squeezed lemon juice
- Salt and freshly ground black pepper
Step 1: Fry the bacon in a skillet over a medium heat. When crisp, place it on paper towels to drain and cool it.
Step 2: Peel the eggs and chop them. Combine them with the bacon, peas and Cheddar cheese in a serving bowl. Then stir in the mayonnaise and lemon juice, adding salt and pepper according to taste. Serve the dish immediately or store it in the refrigerator for later.
