The Paula Deen Coca-Cola cake is made by adding 1 cup of Coca-Cola to a basic chocolate cake recipe. Instead of frosting the cake, cover it in a chocolate glaze containing 1/2 cup of Coke as described in the recipe. Diet Coke should not be used as a substitute.
The recipe for the Paula Deen Coca-Cola cake is to mix 2 cups of flour, 2 cups of sugar, 1/4 teaspoon of salt, 1 teaspoon of baking powder and 1/2 teaspoon of cinnamon in a large bowl. Combine 1 cup of butter, 1/4 cup of cocoa powder, 1 cup of Coke and 1/2 cup of buttermilk in a small sauce pan. Heat over medium-high heat, stirring constantly until it comes to a boil. Remove the mixture from the heat, and pour it over the dry ingredients. Mix well, and add 2 eggs and 1/2 teaspoon of vanilla. Mix again, and pour the mixture into a greased baking dish.
Bake the cake at 350 degrees Fahrenheit for 30 minutes or until a toothpick inserted into the center of the cake comes out clean. While the cake is baking, combine 1/2 cup of butter, 1/4 cup of cocoa powder and 1/2 cup of Coke for the glaze, and heat it over medium-high heat until it comes to a boil, stirring constantly. Remove the glaze from the heat, and whisk in 4 cups of powdered sugar until smooth. Add pecans, and mix well. Pour the glaze over the hot cake. Let it cool completely before serving.
