To make Paradise Bakery sugar cookies, use 1 cup each of granulated and powdered sugar, 4 1/3 cups of cake flour, 3/4 teaspoon of baking soda and 3/4 teaspoon of baking powder. Add 1/4 teaspoon of salt, 2 cups of shortening, 1 egg, decorating sugar and 3/4 teaspoon of vanilla.
Before mixing the ingredients, preheat the oven to 375 degrees Fahrenheit. Using an electric mixer and medium-sized bowl, mix both types of sugar with the shortening until creamed. Slowly increase the mixer speed, and mix for approximately three minutes. In a separate bowl, beat the egg. While the mixer is running, carefully add the vanilla and beaten egg.
In a different bowl, mix together the cake flour, baking soda, baking powder and salt. Once these ingredients are well-mixed, slowly add them to the wet-ingredient mixture. A slow mixer speed helps these ingredients blend well. Take care to avoid over-mixing the ingredients.
Using a spoon or scoop, make a small ball of dough, and roll it in the decorating sugar. As you place the cookies directly onto a cookie sheet, slightly flatten them with your fingertips or a fork. Bake the cookies for nine to 10 minutes. Oven times may vary, so observe the cookies to avoid over-browning.
