To make an easy oyster dressing, sauté 3/4 cup of chopped celery and 3/4 cup of chopped onion in 1/2 cup of melted butter. Chop 8 ounces of oysters, draining and reserving the liquid. Add 2 2/3 cups of chicken broth and the oyster liquid to the pan.
Heat the mixture over medium heat. Once it boils, stir in 2 6-ounce packages of stuffing mix and the chopped oysters. Cover the pan, take it off the heat and let it sit for five minutes before fluffing it lightly and serving it.
Alternatively, cook 2 ounces of diced bacon over medium heat until it's crisp. Add 1 stick of butter, melt it, and add diced celery, diced bell pepper and diced onion. Stir in 2 cloves of minced garlic, and cook the mixture until it's soft and fragrant. Season the mixture with 1/2 teaspoon of garlic powder, 2 tablespoons of paprika and 1/2 teaspoon of cayenne pepper.
Add 12 cups of diced baguettes to a large bowl. Spoon the bacon and vegetable mixture over the top, along with 4 dozen shucked oysters, 1 cup of oyster liquor, 2 minced scallions and 2 tablespoons of chopped parsley. Beat 4 eggs with 1 teaspoon of hot sauce and 1 teaspoon of kosher salt before pouring it into the bread mixture. Combine all the ingredients, transfer the dressing to a greased basking dish, and bake it for 45 minutes at 350 F.
