To make oven baked rice pudding, cook white rice separately, and combine with other ingredients such as beaten eggs, sugar, milk and raisins. Add vanilla extract and salt for flavor, and bake in a preheated oven for approximately 1 hour
To cook white rice for the oven baked rice pudding, place 1 cup of raw rice in a saucepan of 3 quart capacity, and add 2 cups of water to it. Allow the water to boil, decrease the heat, and let the rice simmer for about 25 to 30 minutes.
In a separate bowl, beat 3 eggs. To it, add 1/2 cup of white sugar and 2 cups of milk, and mix thoroughly. Then, add 1/2 teaspoon of salt and 1 teaspoon of vanilla extract, and blend all the ingredients well. Combine the cooked rice with it, mix in 1/3 cup of raisins, and transfer the mixture to a baking dish measuring 10 by 6 by 2 inches in dimensions.
Place the dish in an oven preheated to 325 degrees Fahrenheit, and bake without covering for 30 minutes. Stir the rice pudding, sprinkle 1 pinch of nutmeg powder over it, and bake again for 30 minutes. The recipe is done if a knife pierced at the midpoint between the pudding's center and edge remains clean when taken out.
