An easy recipe developed to taste like the Olive Garden dessert tiramisu begins with a 10- to 12-inch sponge cake and contains your choice of cream cheese or mascarpone. This Italian dessert is a rich and creamy concoction you can make the day before serving it.
Divide the sponge cake into two layers, each approximately 1 1/2 inches thick. Mix 3 ounces strong black coffee with 3 ounces of brandy or rum. Sprinkle enough of the liquid over the lower layer of the sponge cake to give it a definite flavor, bring careful not to soak it.
Beat 24 ounces of room temperature cream cheese or mascarpone with 1 cup powdered sugar until well blended and spreadable. While mixing, taste for sweetness, and add up to 1/2 cup more powdered sugar as desired. Spread half of the mixture across the top of the cake's bottom layer. Top with the other layer, and spread the rest of the cheese mixture on top of it.
Sprinkle sifted unsweetened cocoa over the top of the cake. Refrigerate this dessert for a minimum of two hours prior to slicing and serving. The cake serves 10.
Other recipes call for 20 to 24 ladyfingers instead of sponge cake. Use half for the first layer and the other half for the top layer.
