Make oatmeal cookies by roasting 1 1/2 cups of raw pecans at 350 degrees Fahrenheit for five minutes. Once the nuts cool, chop them up. Meanwhile, cream together 1/2 pound of softened unsalted butter, 1 cup of dark brown sugar and 1 cup of granulated sugar. Once the mixture is fluffy, add 2 eggs and 2 teaspoons of vanilla extract.
In another bowl, sift 1 teaspoon of baking powder, 1 teaspoon of ground cinnamon, 1 teaspoon of kosher salt and 1 1/2 cups of all-purpose flour. Gradually stir the dry ingredients into the butter mixture, and fold in 3 cups of old-fashioned oatmeal, 1 1/2 cups of raisins and 1 1/2 cups of pecans. Line a baking sheet with parchment paper, and drop 2-inch balls of cookie dough onto the pan. Bake at 350 degrees Fahrenheit for 12 to 15 minutes.
