Make some of the best oatmeal cookies by mixing flour, old-fashioned oatmeal, brown sugar and butter with ground cinnamon, raisins and pecans. When making the cookies, cream together the butter and sugars before slowly mixing in the dry ingredients.
Make oatmeal cookies by roasting 1 1/2 cups of raw pecans at 350 degrees Fahrenheit for five minutes. Once the nuts cool, chop them up. Meanwhile, cream together 1/2 pound of softened unsalted butter, 1 cup of dark brown sugar and 1 cup of granulated sugar. Once the mixture is fluffy, add 2 eggs and 2 teaspoons of vanilla extract.
In another bowl, sift 1 teaspoon of baking powder, 1 teaspoon of ground cinnamon, 1 teaspoon of kosher salt and 1 1/2 cups of all-purpose flour. Gradually stir the dry ingredients into the butter mixture, and fold in 3 cups of old-fashioned oatmeal, 1 1/2 cups of raisins and 1 1/2 cups of pecans. Line a baking sheet with parchment paper, and drop 2-inch balls of cookie dough onto the pan. Bake at 350 degrees Fahrenheit for 12 to 15 minutes. Once the cookies are browned, move them from the pan to a baking rack, and cool them completely before serving.
