First, prepare two cups of Bisquick mix, 1 cup of milk, one egg and 2 tablespoons of sugar. Pour the biscuit mix and sugar together a bowl. In a separate bowl, beat the egg and add milk, then add the mix to the biscuit mixture.
Once the mixture of ingredients is all stirred together, stir the mixture until it is well blended. Fill the cups of a greased muffin pan up to two-thirds full with the muffin mix. Bake at 400 degrees Fahrenheit for about 20 to 25 minutes. For a variation on this recipe, add raisins or dates into the mix while stirring. This change does not adjust the baking time requirement.
To make banana nut muffins, combine 1/2 cup vegetable oil, 1 1/2 cups of mashed bananas, 1 teaspoon of vanilla, three eggs, 2 2/3 cups of Bisquick mix, a cup of sugar and half a cup of chopped walnuts. Pour the muffin mix into paper-lined muffin tins, and bake them at 300 degrees Fahrenheit, or until the muffins exhibit a light brown color. Check on the muffins about every five minutes until the browning starts to happen. This recipe makes about 14 banana nut muffins, depending on the size of the muffin pan utilized.
