To make a moist orange cake, use fresh orange juice for the cake, then prick the top and pour a homemade orange syrup over the baked cake. In addition to the fresh juice, ingredients include real butter, castor sugar, eggs, vanilla essence, flour and baking powder.
Preheat the oven to 350 degrees Fahrenheit. Next, grease and line a 7-inch round cake pan. In a mixing bowl, sift together 1 1/4 cups of plain flour and 2 teaspoons of baking powder, and set aside. In a separate large mixing bowl, beat together 1/2 cup of softened butter and 3/4 cup of castor sugar until the mixture is light and fluffy. Add in 2 eggs, one at a time, and beat well. Next, beat in 1 teaspoon of vanilla extract. Using 1/3 cup of fresh orange juice, alternately beat in orange juice and flour mixture into the sugar and butter mixture. Mix all the ingredients until they are well blended. Pour the batter into the cake pan, and bake for 25 to 30 minutes or until an inserted toothpick comes out clean.
Remove the cake from the oven, and transfer to a serving plate. Peel off the paper, and let it cool while you prepare the orange syrup. To prepare the syrup, begin by combining 1/4 cup of castor syrup and 1/3 cup of fresh orange juice in a saucepan. Bring the mixture to a boil, and cook for 2 to 3 minutes or until the sugar dissolves.
Prick the top of the orange cake with a fork, and pour the orange syrup over the top of the warm cake. Set the cake aside for 30 minutes so that the syrup is absorbed. Cut into slices, and serve. The recipe yields 6 to 8 servings.
