To make mock apple pie using crackers, bring to a boil 2 cups of water, 3/4 cup of sugar and 2 teaspoons of cream of tartar in a medium pan. Add 30 Ritz crackers, and cook for 5 minutes. Pour the mixture into a pie crust, and bake the pie.
Once the sugar and water mixture comes to a boil, reduce the heat to medium. For a more realistic apple taste, stir in one teaspoon of vanilla extract before you add the crackers.
If you prefer, you can use saltine crackers in place of Ritz crackers. Break the crackers into smaller pieces, and stir them in until each piece is coated with the liquid. While the mixture cooks, stir it occasionally to prevent sticking.
Make a pie crust, or use a premade version. If you are using a premade crust, allow it to thaw completely. Spread the cracker mixture evenly in the crust with a spatula, and shake cinnamon over the top. For extra flavor depth, add a squeeze of fresh lemon juice. Cover the pie with a top crust, or sprinkle on your favorite crumb topping.
Bake the pie at 400 degrees Fahrenheit for 15 to 20 minutes. Turn the heat down to 350 degrees, and bake until the top crust turns brown.
