Better Homes and Gardens has a mini sweet pepper appetizer with cheese and herbs that takes about 25 minutes to prepare and 10 minutes to cook. To make it, gather mini sweet peppers of any color, semi-soft goat cheese and fresh herbs, including basil, tarragon, thyme and chives.
Preheat the oven to 350 F, and cut a slit along the top of about 30 peppers, leaving the stems alone. Remove the seeds from each pepper, and then set the peppers aside. In a bowl, combine 18 ounces of goat cheese with 1/4 cup of fresh snipped herbs. Spoon a small amount of the cheese mixture into each pepper, and then arrange the peppers on a baking sheet. Bake the peppers for eight to 10 minutes, or until the cheese is thoroughly heated, and the peppers are tender and crisp.
Remove the warm peppers with tongs and arrange them on a serving dish in the shape of a pyramid. For a garnish, use fresh basil leaves, and serve warm.
