Mincemeat fruit cake is made by combining flour and baking soda with eggs, mincemeat, condensed milk, candied fruit and nuts. The batter is poured into a baking pan and cooked, then cooled and optionally garnished with nuts. Mincemeat fruit cake can also be made as bars, by cooking the batter in a jelly roll pan and slicing into portions, or as cookies, by dropping tablespoonfuls of the batter onto baking sheets.
Mincemeat Fruit Cake
This recipe yields between 20 and 24 servings.

- Baking spray
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 large eggs
- 27 ounces mincemeat, optionally with brandy and rum
- 1 14-ounce can sweetened condensed milk
- 2 cups mixed candied fruit
- 1 cup coarsely chopped nuts
- Prepare baking pan
- Combine dry ingredients
- Combine with other ingredients
Heat the oven to 300 F. Spray a 10-cup fluted baking pan with no-stick cooking spray.
Sift together the flour and baking soda. Stir to combine and set aside.
In a separate bowl, mix together the eggs, mincemeat, condensed milk, candied fruit and chopped nuts. Fold in the flour mixture to combine thoroughly.
Pour the batter into the baking pan and place in the oven for up to 1 hour and 50 minutes, or until an inserted toothpick comes out clean. Allow the cake to cool at room temperature, then remove from the pan and garnish.
