Meringues can be made in the microwave by kneading 10 1/2 ounces of icing sugar and egg white from a large egg, laying marble-sized pieces of the mix on a paper lined plate and then microwaving it for 1 to 2 minutes. Adding tropical fruits and whipped cream to the basic meringue mix just like in the recipe shown here will make the meringue even more interesting.
When laying the microwave balls on the kitchen paper, make sure to leave enough room in between as the meringue will increase by as much as four times in size.

- 10 1/2 ounces icing sugar
- 1 egg white, lightly beaten
- whipped cream
- tropical fruit
- Mix sugar and egg white
- Make into balls
Sift the icing sugar and lightly beaten egg white. Stir until the mixture takes on the consistency of an icing.
While the mix is still pliable, roll into balls and line them on a plate lined with kitchen paper. Place three balls at a time to make sure there is enough space in between them on the plate.
Microwave the meringue balls on high for about 1 1/2 minutes. Chill. Once the meringue is cold enough, serve with the tropical fruit and whipped cream.
