To make a meatloaf, combine two pounds of ground beef, onion, stuffing mix, eggs and a few seasonings. Bake it in an oven for an hour and let it rest before slicing. Meatloaf is traditionally served with mashed potatoes, cooked vegetables and a side salad.
Preheat an oven to 375 degrees Fahrenheit. In a frying pan, saute 1 large onion, finely chopped, in 1/4 cup of Italian dressing for 8 to ten minutes or until the onions are golden brown. Set onions aside to cool slightly.
In a mixing bowl, combine 2 pounds of ground beef, 1/4 cup of ketchup, 1 6-ounce package of stuffing mix, 1 cup of water and 1 egg or 2 egg whites. Add onions to the meat and mix until well combined. Shape the meat into a 10-by-4-inch loaf and put it in a 9-by-13-inch baking pan. Cover the meatloaf with 1/2 cup of ketchup and place into the preheated oven. Bake for an hour or until the meatloaf is done.
Remove the meatloaf from the oven, sprinkle the top with 1/2 cup sharp cheddar cheese and return it to the oven for two minutes to melt the cheese. Take the meatloaf out of the oven and allow it to sit for 10 minutes before slicing.
