To cook the pancakes, heat a lightly oiled griddle or skillet to medium heat. Pour 1/4 cup of pancake batter onto the griddle, and cook until the batter bubbles. Flip the pancake, and cook for an additional one or two minutes. Serve the pancakes with chopped nuts and pumpkin maple sauce, if desired. To prepare the pumpkin maple sauce, combine 1 cup maple syrup, 1 1/4 cups Libby's pumpkin and 1/4 teaspoon ground cinnamon in a saucepan, and heat until warm.
