Make lemon bars with cake mix by stirring together 1 package of lemon cake mix, 1/2 cup of softened butter and 1 egg and pressing the mixture into a greased pan. In a separate bowl, whisk together 1 14-ounce can of sweetened condensed milk and 1/2 cup of lemon juice, and pour the mixture over the cake crust. Bake the lemon bars at 350 degrees Fahrenheit for 23 to 25 minutes, and allow them to cool before serving.
To make a different lemon bar with cake mix recipe, combine 1 package of lemon cake mix with pudding, 1 egg and 1/2 cup of vegetable oil in a bowl, and press all but 1 cup of the mixture into the bottom of an ungreased baking pan. Bake the crust at 350 degrees Fahrenheit for 15 minutes, and allow it to cool. Cream together 1 8-ounce package of cream cheese, 1/3 cup of white sugar and 1 tablespoon of lemon juice in a bowl, and pour it over the crust. Sprinkle the remaining 1 cup of cake mixture over the top, and bake the bars for 15 more minutes. Allow the bars to cool completely and the cheesecake filling to set before cutting and serving them.
