To make a chocolate Jello pudding cake, heat an oven to 350 degrees Fahrenheit. Use a mixer to blend 1 package of 2-layer white cake mix, 1 1/3 cups of water and 2 egg whites. Pour into a prepared 13 x 9-inch baking dish. Bake for 35 minutes, or until a toothpick poked into the center comes out clean. Use the handle of a wooden spoon to make deep holes at 1-inch intervals throughout the cake.
In a large bowl, beat 4 cups of cold, fat-free milk and 2 packages of Jello chocolate-flavored, sugar-free and fat-free instant pudding together. Each pudding mix should be 1.4 ounces. Disperse half of the pudding and milk mixture into the holes of the warm cake. Allow the remaining mixture to thicken slightly, and then spread over the top of the cake.
Refrigerate the cake for at least one hour before serving. This recipe makes 16 small servings. The total preparation time is approximately 30 minutes with a total cooking time of just over two hours.
Available in a variety of flavors, Jello pudding adds moisture to cakes and a creamy texture to pies. Depending on the occasion, Jello pudding cakes can add a festive touch, with patriotic layered cakes featuring vanilla and strawberry-flavored pudding during Independence Day and a chocolate pudding cake decorated with gummy worms and Oreo cookies for Halloween.
