Taste of Home publishes recipes for orange fluff salad and fluffy lime salad, both of which call for gelatin, on its website, TasteOfHome.com. Taste of Home published the original recipe for orange fluff salad in its January/February 2004 Quick Cooking edition, while the fluffy lime salad recipe appeared in the February/March 2003 edition of the magazine.
To make orange fluff gelatin salad, add 1 cup of sour cream to a bowl. Sprinkle the sour cream with 1 3-ounce package of lemon gelatin, and stir the mixture to blend well. Fold in 2 11-ounce cans of drained mandarin oranges and 1 21-ounce can of drained pineapple tidbits. Next, fold in 1 8-ounce thawed frozen whipped topping. Stir until blended. Sprinkle with pastel-colored miniature marshmallows if desired. The recipe serves eight people.
To make Taste of Home’s fluffy lime salad recipe, drain 1 8-ounce can of crushed pineapple, reserve the juice, and set it to the side. Combine 1 3-ounce package of lime gelatin, the reserved juice, and 3 tablespoons of water in a saucepan over low heat. Cook, stirring until the gelatin dissolves. Refrigerate the mixture for about 30 minutes or until it has a syrupy consistency.
Beat 2 3-ounce packages of softened cream cheese in a small bowl until fluffy. Add the gelatin mixture and 1 cup each of walnuts and marshmallows along with the drained pineapple. Fold in 1 cup of whipped heavy whipping cream.
Transfer the mixture to a serving bowl, and cover the bowl. Refrigerate for two hours. The recipe serves nine people.
