Make Italian bow tie cookies by deep frying small pieces of sweet pasta and then sprinkling them with powdered sugar. The required ingredients are 2 whole eggs plus 2 egg yolks, 3 tablespoons rum, 1 tablespoon confectioners' sugar for the pasta, 3/4 cup confectioners' sugar for sprinkling on the cookies, 1/8 tablespoon salt and vegetable oil.
Place 3 cups of flour into a bowl, making a hole at the center of the flour. Add the whole eggs, egg yolks, confectioners' sugar, rum and salt. Mix the flour with a fork, then with bare hands until you have a tender dough ball. Add 1/4 cup of flour, and continue kneading until you achieve the required elasticity. The kneading takes approximately 10 minutes.
Cover the dough for 30 minutes with a damp towel. After the dough rests, cut the dough into small pieces. Roll the dough to a 1/8-inch thickness. Ensure that the cut strips can go through the pasta machine. A width of 3 inches is preferred. Set the pasta machine to the number three setting, and run the pasta pieces through it slowly.
Put vegetable oil into a fryer to a depth of 2 to 4 inches. Heat the oil to 350 degrees Fahrenheit. Cut the pasta into strips of 7 to 8 inches, and tie them into loose knots. Place them into the boiling oil, and cook until they turn brown. Once they are brown, remove the cookies, and place them in a large bowl to cool. Sprinkle them with the confectioners' sugar.
