One Ina Garten potato casserole recipe is Potato-Fennel Gratin that is made by baking potatoes, fennel, onion and Gruyere cheese in the oven. To make Ina Garten's Potato-Fennel Gratin, saute 2 thinly sliced fennel bulbs and 1 thinly sliced yellow onion in 2 tablespoons of olive oil for 15 minutes at medium-low heat. Meanwhile, peel and slice potatoes into thin rounds. Combine them with 2 cups of Gruyere cheese, 2 cups of heavy cream, 1 teaspoon Kosher salt and 1/2 teaspoon of freshly ground black pepper, and stir in the fennel and onion mixture. Spoon the potato mixture into a baking dish, and drizzle 2 tablespoons of heavy cream and 1/2 cup of grated Gruyere cheese over the top. Bake the casserole at 350 degrees Fahrenheit for 90 minutes.
To make the Potato Basil Frittata, fry 2 cups of diced potatoes in 3 tablespoons of butter at medium-low heat for 10 to 15 minutes in a skillet, Mix together 8 eggs, 5 tablespoons of unsalted melted butter, 15 ounces of ricotta cheese, 3/4 pound of grated Gruyere cheese, and 1/2 teaspoon each of salt and pepper in a bowl, and add 3/4 cup of chopped fresh basil leaves, 1/3 cup of flour and 3/4 teaspoon of baking powder. Spoon the cheese mixture over the potatoes, and bake the casserole at 350 degrees Fahrenheit for 50 to 60 minutes.
