To make enough imitation crab salad with ranch dressing to serve eight, mix 1 pound of flaked imitation crabmeat with 1/2 cup of finely chopped celery and 1 teaspoon of minced fresh parsley. Top with 1/2 cup of ranch dressing, 1/3 cup of mayonnaise and 1 tablespoon of white sugar, then mix until combined. Chill in your refrigerator overnight, stir again, then serve with club-style crackers.
Alternatively, make Golden Corral-style imitation crab meat salad with ranch dressing by omitting the parsley and adding green onion and green bell pepper. Separate 3 pounds of imitation crabmeat by hand, and stir in a large bowl with 1 cup each chopped celery and green onion, 1/2 cup chopped green bell pepper and 1/2 cup each of ranch dressing and heavy mayonnaise. Refrigerate overnight, then serve.
A simpler option is to add frozen peas and grated cheese and omit the mayonnaise, herbs and vegetables. Before preparing, allow the frozen peas to thaw, then tear the crab into bite-sized pieces, add the peas, sprinkle with cheese, and drizzle with ranch dressing. Stir with a spoon, and refrigerate until ready to serve.
