To make a batch of iced tea, start with water, 2 tea bags and a heat-proof pitcher. Place the tea bags in the pitcher, boil the water and pour 4 cups into the pitcher, and let the teabags sit for 3 to 5 minutes, depending on the strength you desire.
Add sugar to sweeten the taste and lemon slices for extra flavor. Chill the hot tea by adding 6 cups of ice cubes, and stir these in until melted, or pour in 4 cups of cold water. Leave the iced tea in the refrigerator to keep it chilled.
Add extra flavor by mixing fruit in the tea. To make fruit iced tea, add pieces of fruit and 1/2 cup of sugar syrup, and let the fruit soak in the tea for a few hours. Fruit options include kiwi, pineapple and peach, and the fruit remains lie at the bottom of your cup after drinking the tea.
Make strawberry iced tea by adding 1/6 to 1/3 cup powdered sugar when tea is still warm, plus 1/8 to 1/4 cup lemon juice. When the tea cools, add a pint of fresh strawberries that have been pureed and put through a sieve to remove the seeds. Chill the tea before serving.
