For homemade pancakes, gather 1 cup buttermilk, 1/2 teaspoon baking soda, 1 cup flour, 1 egg and 3 tablespoons of butter. Also organize 1 teaspoon baking powder, 1 tablespoon sugar and some salt. Cook the batter over medium heat on a nonstick griddle until golden brown.
Combine the baking powder, baking soda, sugar, flour and a pinch of salt into a large mixing bowl, combining everything thoroughly with either a fork or a whisk. In a small saucepan, melt the butter, then transfer it into the bowl containing the dry ingredients, followed by the buttermilk and egg. Stir everything together until the consistency is smooth and even. To add fruit, introduce 1 cup of fresh berries or chopped banana into the batter, and integrate.
Heat the nonstick griddle over medium heat until the surface is ready. Next, take a 1/4-cup measuring vessel, and use it to ladle batter onto the griddle for each pancake. Make sure not to overcrowd the griddle, as this impairs even cooking; small batches are better. Once one side of the cake is golden brown, flip it over and cook the other. If extended warming time is required, hold the finished pancakes in an oven at 275 degrees Fahrenheit, covered so that moisture doesn't escape. Serve the pancakes as soon as possible with a favorite syrup or additional fresh fruit.
