For a great homemade beef jerky seasoning, heat 1/2 cup of honey in a saucepan and add 2 tablespoons of granulated garlic, 2 tablespoons of kosher salt and 2 tablespoons of cracked black pepper. Add a prepared flank steak to the marinade and refrigerate for approximately 24 hours. Afterward, drain out the flank steak strips and dry in a food dehydrator for four to six hours.
Alternatively, use a dry-rubbed seasoning in which the salt and spices work on the meat without any added liquid. Grind the following ingredients uniformly in a food processor: 1/8 cup of kosher salt, 1/8 cup of brown sugar, 1/8 cup whole dry coriander, 1/8 cup of dried or freshly minced tangerine peel, 5 whole star anise pods, 1 tablespoon of paprika and 1 teaspoon red chili flakes. Toss the strips of the prepared flank steak with the seasoning, and refrigerate for 24 hours. After this, brush off excess spice rub from the strips, and dry in a food dehydrator for four to six hours.
For a sweet and salty seasoning, combine 1 cup of soy sauce, 3/8 cup of brown sugar, 1 teaspoon of five spice powder, 1 tablespoon of ground ginger and 1 teaspoon of ground cumin. Follow the same marinating and drying instructions as in the two recipes above.
