For a quick ketchup-based honey garlic sauce, sauté 4 minced garlic cloves in 1 tablespoon of butter until the garlic is tender. Stir in 3/4 cup of ketchup, 1/2 cup of honey and 3 tablespoons of soy sauce. Bring the mixture to a boil, reduce heat, cover and simmer for 10 minutes. This sauce works well served with miniature meat balls as an appetizer.
For a classic honey garlic sauce without ketchup, combine in a medium saucepan 2 cups of chicken broth, 1/2 cup each of brown sugar and honey, 1/4 cup of soy sauce, 6 crushed garlic cloves and 1 teaspoon of diced ginger. Bring the mixture to a gentle boil, reduce the heat and simmer for 5 minutes, stirring often. For a thicker sauce, stir in 1 tablespoon of cornstarch mixed with 1/4 cup of hot water. Use immediately for grilling meat or as a dipping sauce, or cover and refrigerate.
For a barbecue-flavored honey garlic sauce, mix together 3 crushed garlic cloves with 2 cups of ketchup, 1 cup of water, 1/2 cup of honey and 3 tablespoons of brown sugar. Add 2 tablespoons each of dried onion flakes, molasses and hot sauce; 1 tablespoon of soy sauce; 1 teaspoon each of Worcestershire sauce, salt and crushed red pepper flakes; and 1/2 teaspoon each of white pepper, black pepper, cayenne pepper and paprika. Bring the mixture to a gentle boil, and simmer for at least 30 minutes.
