Create homemade Cadbury-style cream eggs using corn syrup, butter, icing sugar, vanilla, yellow food coloring and chocolate chips. An egg-shaped candy mold and a stand or hand mixer is also required.
To start, gather the required ingredients along with a mixer, mold and measuring equipment. A kitchen scale is the easiest to use, but measuring spoons or cups also work.
To prepare the filling, cream together 1/2 cup of light corn syrup, 1/4 cup butter (at room temperature) and 1 teaspoon of vanilla extract. Sift 3 cups of icing sugar into the mixture and beat it until it is thoroughly mixed. Take one-third of the mixture and put it into a separate bowl, and stir in yellow food coloring. Place both bowls into the refrigerator to set.
Once cooled, roll the yellow mixture into balls and place them in the freezer. When set firm, surround the yellow ball with white filling and return it to the refrigerator.
Melt a 12-ounce bag of milk chocolate chips and coat the molds with a thin layer. Place a filling ball into each mold. Cover with chocolate. Use the remaining melted chocolate to seal both halves of the shells together to create the egg. Place in the refrigerator to set. Remove from the mold to reveal the final product.
