Banana pudding is easily made using 3/4 cup sugar, 2 tablespoons cornstarch, 3 cups milk and 4 egg yolks. In addition, this recipe calls for 1 teaspoon vanilla extract, 1/2 stick butter, 3 medium sliced bananas and a 12-ounce box of vanilla wafers.
The meringue topping to the banana pudding requires 3 egg whites, 1/4 cup of sugar and 1/4 teaspoon cream of tartar. To begin the making the pudding, mix together the cornstarch and sugar, and slowly begin adding the milk. These should be mixed together in a double boiler if possible, but simply cooking over medium heat works as well. Keep stirring until the mixture thickens, then beat the egg yolks with a small amount of the hot mixture. Add the egg yolks to the hot mixture, and let it cook for about two minutes.
After this, remove the custard from the heat source, adding the butter and vanilla to the pot. Let the custard cool. In a 9-by-9-inch pan, layer the custard with the vanilla wafers and sliced bananas. Make sure the pudding is in both the bottom and top layers. To add the meringue, whip together the egg whites and cream of tartar. Slowly add sugar until the mixture forms peaks, and then slather it to the top of the pudding. Bake the pudding until the peaks are golden brown.
