To make homemade balsamic dressing, gather 3/4 cup of extra-virgin olive oil, 1/4 cup of balsamic vinegar, salt and freshly ground pepper. This recipe makes about a cup of salad dressing.
To make the balsamic dressing, find a jam jar or other container that seals well. Combine the balsamic vinegar and olive oil in the container and add a large pinch of salt and pepper. Shake or mix the dressing vigorously to mix, and dip a vegetable, such as lettuce, into the dressing to taste. Adjust the salt, pepper, oil or vinegar as needed.
To change the flavor of this dressing, consider adding a spoonful of mustard, minced garlic, shallots or fresh herbs. Additionally, add a teaspoon of dried herbs, brown sugar or a spoonful of honey. To store this dressing, keep it on the counter or refrigerate if adding fresh ingredients. This dressing keeps for several weeks, but the oil and vinegar separate after a few minutes. To remix it, shake the container before using the dressing.
It is possible to adjust the amount of this recipe, as long as a ratio of 3 parts olive oil to 1 part vinegar remains. Make small amounts of the dressing in a small bowl and then immediately pour on a salad.
