Make a homemade 7-Up cake with sugar, flour, 7-Up, eggs and butter. This recipe takes about 1 hour and 45 minutes to prepare and serves about 10 people.
To make the 7-Up cake, first preheat an oven to 325 degrees Fahrenheit, and butter a 9-inch bundt pan. Next, using an electric mixer, combine 3 cups of white sugar and 1 1/2 cups of softened butter, and beat until well combined. Beat the eggs into the butter mixture one at a time. Add 3 cups of all-purpose flour, beating the flour in 1 cup at a time, and combine well. Pour in 2 tablespoons of lemon extract, and stir in a 12-ounce can of 7-Up until the entire mixture is smooth and creamy.
After mixing, pour the batter into the bundt pan. Place the pan in the oven, and bake for about an hour and 15 minutes. A toothpick inserted in the center of the cake should come out clean when the cake is finished. Remove the cake from the pan.
For the glaze, beat 1 cup of sifted powdered sugar, 1/4 cup of milk and 1/2 teaspoon vanilla extract in an electric mixer. When the glaze is smooth, pour it over the 7-Up cake.
