To make healthy oven-roasted potatoes, preheat the oven to 425 F, wash 2 pounds of potatoes, leaving the skins intact but cutting away the eyes or blemishes. Cut large potatoes into 2-inch pieces. Place the potatoes into a baking dish, and drizzle them with 2 tablespoons of olive oil.
Sprinkle 1 to 2 tablespoons of minced thyme, oregano, rosemary leaves or other herbs, and 1 teaspoon chopped garlic on top the potatoes. Add salt and pepper to taste. Toss the potatoes in the pan to coat with the oil and seasonings. Bake for 45 minutes to one hour, turning the potatoes occasionally as they bake. This recipe works with both red and white potatoes.
