This casserole dish contains layers of flour tortillas, ground beef, condensed cream of mushroom soup, chopped green chiles and refried beans. It takes a little over an hour to prepare and bake and requires a skillet or saucepan to cook and season the ground beef filling. Bake the casserole in an eight-by-10-inch baking dish for about 40 minutes in a preheated, 350 degree oven.
To create the ground beef filling, cook the ground beef in a skillet or saucepan over medium heat for about 10 minutes, or until it is brown and crumbly. Pour excess fat out of the skillet, and mix in two 10.75-ounce cans of condensed cream of mushroom soup, 2 cups of milk and two 4-ounce cans of green chiles. Simmer this mixture on medium heat for about 10 minutes.
To prepare the casserole, you need eight 10-inch flour tortillas, one 14-ounce can of refried beans and about 1/4 cup of shredded cheddar cheese. Spread the refried beans on two of the tortillas and lay them on the bottom of the eight-by-10-inch baking dish. Cover these tortillas with roughly a quarter of the ground beef filling and 1 tablespoon of cheese. Repeat this process for the remaining tortillas, and top it all off with extra cheese, if you desire. Bake the casserole until the cheese begins to bubble and brown, and let cool for about 10 minutes before you serve it.
