To make slow-cooked ham and beans, combine 1 pound of green beans with 4 chopped potatoes, 2 cups water and a ham bone in the slow cooker. Cover the cooker and cook the mixture on low for six to eight hours or for three to four hours on high.
Alternatively, combine 2 tablespoons tomato paste with 2 tablespoons Worcestershire sauce, 2 teaspoons red pepper flakes, and 1 tablespoon of paprika in the slow cooker. Add a 4-pound bone-in ham along with 4 cups water and 1 pound of dried beans. Season the mixture with 1 bay leaf and 4 sprigs fresh thyme.
Cover the cooker and cook the mixture for eight hours on low. Add one 28-ounce can of crushed tomatoes, 1 bunch chopped scallions and 4 cloves minced garlic to the slow cooker. Continue cooking for another 30 minutes before transferring the ham to a cutting board. Slice the ham, and serve it with the bean mixture.
To make a hearty ham and bean soup, combine 1 cup diced celery, 1 cup diced carrot, 1 1/2 cups chopped onion, 6 chopped garlic cloves and 1 tablespoon chopped thyme in the cooker. Add 2 pounds ham hocks, 1 pound dried beans, 52 ounces chicken stock and 1/4 cup minced fresh chives. Cook the soup on low for eight hours. Transfer the ham hocks, and remove the meat to stir back into the soup.
