  • 1 cup butter, softened
  • 4 eggs
  • 2 cups unsweetened applesauce
  • 1 cup packed brown sugar
  • 1 cup sugar
  • 3 cups small gumdrops
  • 1 cup raisins
  • 1-1/2 cups chopped dates
  • 1-1/2 cups chopped pecans
  • 1 teaspoon vanilla extract
  • 1/3 cup red candied cherries, cut in half
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon pumpkin pie spice
  • 4 cups all-purpose flour, divided
  1. Cream butter and sugars
  2. Cream the butter and sugars in a large bowl until the mixture is light and fluffy. Beat in applesauce, eggs and vanilla extract. Also, preheat oven to 300 degrees F.

  3. Mix ingredients
  4. Remove any black gumdrops and save for another use. Combine the rest of the gumdrops with pecans, dates, raisins, cherries and 1 cup flour. Mix together cinnamon, pie spice, baking soda and the rest of the flour.

  5. Combine everything together
  6. Add the cinnamon mixture gradually to the creamed mixture, then fold in the gumdrop mixture.

  7. Bake the loaves
  8. Pour the mixture into two greased 9-inch by 5-inch loaf pans and bake for 45 minutes. Cover the loaves with foil and bake 45 more minutes. Cool the loaves for 10 minutes before removing them from the pans.
