Green Salsa Recipe

Remove the husks from the tomatillos and give them a rinse. Remove the thick parts of the cilantro stems and chop the herb roughly. Peel and chop the onion.
To make the recipe with roasted tomatillos and chilies, preheat the broiler to hot and spread the tomatillos and chilies out on a baking sheet. Roast them 4 inches below the broiler until they are very dark. This should take around 5 minutes.
Add the roasted or fresh tomatillos and chilies to a food processor or blender with the cilantro and water. Puree the ingredients and transfer them to a bowl. Add the onion and salt to the mixture.
To neutralize the spice from the chilies, add half of an avocado to the mixture. Blend the avocado in a food processor or blender with the tomatillos and chilies.Learn more about Cooking
