Green Salsa Recipe

This recipe originally appeared on "My Country, My Kitchen" on the Food Network and is hosted on the Food Network website. It is quick and easy to prepare and can be made cooked or fresh.

Prep time: 15 minutes

Cook time: 10 minutes

Ready in: 25 minutes

Ingredients:

  • 8 ounces of tomatillos
  • 1 jalapeno or 2 serrano peppers
  • 5 or 6 sprigs of fresh cilantro
  • 1/4 cup water
  • 1/4 cup chopped onion
  • Salt to taste
  1. Prepare the vegetables
  2. Remove the husks from the tomatillos and give them a rinse. Remove the thick parts of the cilantro stems and chop the herb roughly. Peel and chop the onion.

  3. Roast the tomatillos and chilies (optional)
  4. To make the recipe with roasted tomatillos and chilies, preheat the broiler to hot and spread the tomatillos and chilies out on a baking sheet. Roast them 4 inches below the broiler until they are very dark. This should take around 5 minutes.

  5. Blend the ingredients
  6. Add the roasted or fresh tomatillos and chilies to a food processor or blender with the cilantro and water. Puree the ingredients and transfer them to a bowl. Add the onion and salt to the mixture.

To neutralize the spice from the chilies, add half of an avocado to the mixture. Blend the avocado in a food processor or blender with the tomatillos and chilies.
