To make green pepper jelly, mince peppers, boil them with vinegar and sugar, add dye and pectin, and pack the jelly into jars. You need peppers, a knife, a food processor, tongs, jars, vinegar, sugar, a towel, a spoon, food dye, pectin, a stove, a pot and a canner.
- Mince the peppers
Coarsely chop a green pepper and several hot peppers. Put 3/4 cup of green pepper pieces and 1/4 cup of the hot peppers into a food processor, and pulse them into tiny pieces.
- Boil the peppers with vinegar and sugar
Put a pot on the stove, select the hottest burner setting, and add 1 1/2 cups apple cider vinegar. Stir in 6 cups of sugar until it dissolves, add the minced peppers and stir the mixture until it boils.
- Add food coloring and pectin
Turn off the stove, and remove the pot from the burner. Stir in four drops of green food dye and 4 ounces powdered pectin.
- Pack the jelly into sterilized jars
Pack the jelly into sterilized glass canning jars. Leave 1/4 inch of head space at the top of the jars, wipe the rims and attach the lids. Process the jars according to the instructions included with your boiling water canner.
