Make good Italian cannoli filling recipe by using ricotta cheese, powdered sugar, cinnamon, chocolate chips and powdered sugar. Another good filling uses a combination of ricotta cheese and mascarpone.
Make cannoli filling by whisking 2 cups of whole milk ricotta cheese until there are no lumps, then sifting in 3/4 cup of powdered sugar, 1 teaspoon of ground cinnamon and 1/4 teaspoon of allspice. Beat 1/4 cup of heavy cream until stiff peaks form, then fold it into the ricotta cheese mixture. Finish by stirring 1/4 cup of small semisweet chocolate chips and the zest from 1 lemon into the filling. Chill before using.
Another good recipe uses 3/4 cup of whole milk ricotta cheese and 3/4 cup of mascarpone cheese. Mix these two ingredients together, then stir in 1/4 cup of powdered sugar, 1/2 teaspoon of vanilla, 1/2 teaspoon of ground cinnamon and 1 pinch of salt. Cover and refrigerate.
A third recipe uses candied orange rind and toasted almonds as well as ricotta cheese. First, press 1 pound of fresh ricotta through a sieve, and drain overnight. Whip the ricotta cheese, then mix in 2/3 cup of confectioner's sugar and 1 tablespoon of Grand Marnier. Stir in 1 ounce of coarsely chopped unsweetened or bittersweet chocolate, 2 tablespoons of coarsely chopped candied orange rind and 2 tablespoons of coarsely chopped and toasted almonds.
