Combine 12 and 1/2 cups of green tomatoes, 8 chopped onions, 10 chopped green bell peppers and 3 teaspoons of salt in a bowl, and refrigerate overnight. Drain the mixture, and add 6 chopped green chile peppers, 1 quart of white vinegar, 1 and 3/4 cups of white sugar and 1/2 cup prepared horseradish to a pot. Make a sachet of cinnamon, cloves and allspice to the pot, and boil for 15 minutes. Jar the mixture, and refrigerate before serving.
The shredded or diced vegetables vary depending on taste and seasonality and availability. Cabbage, cauliflower, carrots and zucchini are typical additions to chow chow relish and add different flavors to the mix. If green chile peppers are too spicy, omitting the spicy peppers completely is recommended and doesn't take away from the overall sweet and sour nature of the relish.
Chow Chow relish is a popular condiment typically celebrated in the southern United States with no single recipe as the standard. Chow chow is a versatile accompaniment to many dishes, and it is used as topping for crab cakes and mixed in with the filling of deviled eggs. Chow chow can be substituted for pickle relish in dipping sauces and toppings.
