In a large mixing bowl, beat together 1 stick of softened butter and 2 cups of sugar until the mixture has a fluffy consistency, approximately three minutes. Add 2 eggs, one at a time, beating thoroughly between each one. Mix in 1 15-ounce container of whole-milk ricotta cheese, 3 tablespoons of lemon juice and the zest of 1 lemon. Continue to beat the ingredients until they are all thoroughly incorporated, and then mix in the dry ingredients.
Spoon approximately 2 tablespoons of dough onto the parchment-lined sheets for each cookie. Bake the cookies for 15 minutes or until the outsides of the cookies just start to turn golden brown. Allow the cookies to cool on the baking sheets.
To make the glaze, mix together 1 1/2 cups of powdered sugar, 3 tablespoons of lemon juice and the zest of 1 lemon until the glaze has a smooth consistency. Use about 1/2 teaspoon of glaze per cookie. Allow the cookies to set for about 2 hours or until the glaze hardens.Learn more about Desserts
