To make a gelatin poke cake, prepare a white cake mix according to the directions on the product packaging, poke holes in the top of the prepared cake, and pour one package of prepared, unset gelatin over the cake. Refrigerate the cake for three hours, and top with whipped cream.
Prepare one boxed white cake mix according to the directions on the product packaging, and bake the cake in a 13-by-9-inch baking dish. Allow the cake to cool for 15 minutes. After the cake cools, use a fork to poke holes in the top of the cake. The holes should be spaced 1/2 an inch apart.
To make the gelatin, mix 1 cup of boiling water with a 3-ounce package of gelatin. Stir the gelatin until it is dissolved, and add 1/2 cup of cold water to the mixture. Stir the mixture well, and pour it evenly over the prepared cake.
Refrigerate the cake for three hours to allow the gelatin to set. Top the cake with whipped cream, and refrigerate it for an additional hour. Any flavor gelatin may be used to make the cake, and low-fat whipped cream can be used to top the cake. Additional toppings, such as fresh strawberries, can be added before serving.
