Some recipes for fried cabbage and noodles include stir-fried noodles with cabbage and fried cabbage and kluski noodles. To make the first recipe, prepare one 8-ounce package of dried Chinese noodles per the package directions. Drain the noodles, and toss them with 2 teaspoons of sesame oil.
In a separate bowl, combine 1/4 cup of dry sherry or chicken broth, 2 tablespoons of oyster sauce, 1 teaspoon of sugar and 1/8 teaspoon of pepper, and set it aside. Set a skillet or wok over high heat, and heat 1 tablespoon of vegetable oil. Add 1 crushed clove of garlic and 1 tablespoon of finely chopped ginger root. Cook for about 30 seconds, and then add 1 cup of sliced shiitake mushrooms, 4 cups of thinly sliced Chinese cabbage, and 1 1/2 cups of shredded carrots, or about 2 medium carrots. Stir fry the vegetables for about one to two minutes or until just tender, and then stir in the sherry or broth mixture. Toss in the noodles, and serve.
To make the kluski-noodle dish, cook one 8-ounce package of kluski noodles in salted boiling water until just tender, approximately seven to 10 minutes. Drain and set aside the noodles. Chop 1 pound of bacon, and brown it for five to eight minutes over medium-high heat. Add 1 chopped head of cabbage and 1 chopped onion, and cook them until the cabbage wilts, approximately 10 minutes. Toss in the cooked noodles, and season the dish with a dash of hot-pepper sauce.
